Storing

West Country cheeses are best stored as they are on our farms - in a cool, damp environment. For most of us this simply means the refrigerator. Keep it in the warmest part of the fridge - if it’s kept too cold the cheese may lose some of its wonderful flavour. The warmest part of your fridge is usually the top shelf unless it has a freezer compartment, in which case use the salad drawer at the bottom. 

Cheese that becomes too dry will start to crack and wither, so ensure that it remains well wrapped. We were the first to introduce the now familiar parchment wrapping. This packaging helps preserve all the great flavours of our cheeses.

To enjoy it at its best, remove the cheese from the fridge and stand at room temperature for at least an hour. In just the same way as a good wine, this allows the full character of the cheese to develop.
 

 
Royal ploughmans for the Countess

After last years washout , the sun shone brightly on The Countess of Wessex as she attended the PDO lunch and presented Parkham farms with cups for both the reserve champion cheese and best PDO West Country Farmhouse cheddar. The show was a triumph for our other farmhouse cheesemakers too with a total of 40 medals and 7 special awards, just rewards for all the care and craftsmanship that goes into all our handmade cheeses.
